Imagine the Minutemen covering Mozart. When iconoclasts Bree and Chad Stock decide to make an “Oregon Chardonnay” of course they look to the Jura for inspiration. The fruit fermented outdoors in open tanks behind their barn, developed flor several times and produced a delightfully savory, oxidative and complex New Oregon wine with ancient roots.

A robust variation of the more familiar “blanc,” this grape sees three weeks of fermentation on the skins. It looks like a white but has the tannic grip and structure one would expect from Bordeaux. A fantastic food wine ready for anything with cream or mushrooms.
BECHTOLD ‘NEF DES FOLLES’ $14/69

Macerated on its skins for 12 days and aged in a single old foudre, this is luscious, burnished orange wine with no added SO2. A silky stew of blood orange, apricot pits and chamomile.

Northern Rhone white wine treated like sherry, Chateau de la Selve has been holding back a little of each previous vintage and topping off with the new year’s wine, essentially creating an infinity barrel. Rich, robust, harvesty, and fortified with just enough Marc to give it some backbone.

Emmanuel Camut and his brother Jean-Gab are the stewards of Adrien Camut Calvados, in our humble opinion the best apple brandy in the world, which makes his ‘Ambrosia’ the best Pommeau in the world. Emmanuel boils fresh apple juice overnight until it’s reduced by half before adding 4-year-old Calvados to stop fermentation, then letting it rest and meld in old Calvados barrels. Like deep, dark, wonderfully haunted balsamic apple juice.
